Focaccia di San Giorgio. An introduction to Genoa and Liguria



Eataly Genova opens its doors to Focaccia di San Giorgio, a tribute to Ligurian focaccia and Genoa's ambassador in the world. The collaboration is endorsed by Marco Bucci, Mayor of Genoa, Luisa Puppo, the President of the Genova World non-profit association, and Umberto Curti, the Scientific Director of the association and food historian, all present during the first batch.

Focaccia di San Giorgio: a tribute to Ligurian focaccia

Starting on February 20th, Eataly Genova's bakery, already engaged in the educational and popular activities organised for the "month of bread" (the first step of a year-long journey in food education), will bake the tasty Focaccia di San Giorgio (Saint George's focaccia) every day and at various times of the day. The Focaccia di San Giorgio represents a virtual journey through the Ligurian provinces and their excellence. Conceived by Genova World, a cultural association working in close synergy with the Municipality of Genoa to promote the image of Genoa in the world, the Focaccia di San Giorgio takes its name from Saint George's flag, the symbol of the regional capital city and of Liguria itself: it encapsulates in a recipe some of the most characteristic flavours of the region.

Focaccia di San Giorgio. Food as the storyteller of places

The base is a Genoese focaccia with EVO oil; potatoes evoke the Savona area (thinly sliced, they are the only element present before baking). When cooked, it is garnished with prescinsêua (tangy curd cheese) and oregano, representing Genoa and its province, anchovies for the province of La Spezia and taggiasche olives for the province of Imperia. The recipe was developed by Umberto Curti, Scientific Director of Genova World: 'from an organoleptic point of view, the sweetness of the potatoes meets the savouriness of the anchovies, the slight bitterness of the olives, the sourness of the prescinsêua, and the aroma of the oregano. I am pleased to have shared the recipe with the bakers of Eataly Genova to 'hand it over' to tourists and gourmets in the fittest of places. The shelves here display the best wine pairings, starting with the great whites of the Ligurian Mediterranean'.
