Torta stroscia from Liguria - history and wine matching
My videotribute to torta stroscia, the ancient crunchy EVO shortcrust pastry tart prepared in Pietrabruna, a rural village of the entroterra of the province of Imperia. Here it comes served with chinotto (i.e. myrtle-leaved orange) marmalade from Savona - a truly Mediterranean encounter of traditions and gourmet excellences! Wine pairing calls for passito wines (white), e.g. Pigato passito.
