Ceci in zimino from Liguria - history and wine matching


My video tribute to ceci in zimino (chick peas and Swiss chards soup, here with moscardini), a must of the Ligurian recipe book and clear evidence to the amazing links between places, people and stories. Chickpeas are a staple ingredient in Genoese street food cuisine (e.g. farinata, panissa...) as well as in the whole Mediterranean basin (from socca to hummus). The word zimino comes from the Arabic language and hints to unctuous preparations and/or sauces. Wine matching goes lregional in this video and opts for Riviera Ligure di Ponente Pigato Doc.
